oxtail stew

we’ve been wanting to get a crockpot/slowcooker for awhile to make soup…but never got around to pick up one.  until our friend grace got us a slow cooker for our housewarming.  THANKS!!!  the first thing we’ve been wanting to make is oxtail soup…after 6+ hours…it turned into a stew…


a medley of potato, carrots, onions, n tomato…

gotta have those oxtails…

sautee the veggies…

coat the oxtail in seasoned flour (salt n pepper)

seared until golden brown

put everything into slow cooker with 2 cups of stock, 1 can of tomato paste, 1 cup of red wine

six hours….

it was DELICIOUS!!!!

soy sauce chicken

so on my day off…i surprised sammy with brownies n a home cooked meal waiting for him when he comes home from work =D

i made soy sauce chicken wings with some modifications from my mom’s recipe off the top of my head…if u havent notice…sammy LOVES wings…he stocked up on chicken wings from costco…we still got a bunch of them in the freezer…

there r 2 types of soy sauce used…i still remember my mom trying to “teach” us n i just laugh when she said “new” n “old” soy sauce…i never really understood the difference until now…the combination adds diff taste dimensions…n i think my mom used rock sugar…but i used reg dark brown sugar instead….

1 cup of dark soy sauce, 1 cup of light soy sauce, bruise pieces of ginger n add sugar to taste (i added about 4 tablespoons)…i like my soy sauce chicken salty n not sweet so add more sugar if u like it sweeter…bring mixture to a boil dissolving all sugar…then add chicken wings…add water so that the mixture coats all the chicken…bring it to a boil…about 5mins (tip is to add hot water…i added cold n waited a bit longer for it to boil up)…n simmer for another 10-15mins depending on ur preference…the longer u simmer it the more the chicken absorbs the flavors (but make sure ur chicken is cook though)….the soy sauce can be saved for later use…i remember my mom using the soy sauce for the rest of the week…

i simmered them for about 30mins cuz sammy was running late from work…it came out super dark…n extremely flavorful…YUM…we cleaned our plates =D

accompanied by string beans with black bean sauce….

1st annual thanksgiving feast

the first annual feast was successful…aside from my sis’ family couldnt make it…but it’s understandable..they’re still jetlag…guess jetlag is pretty tough on kids…we started preparing on tuesday….when i came across the cheesecake flan recipe on foodtv.com….i knew i had to make it even though i couldnt have it…i’m lactose intolerant…so cheese n milk wont do well for me…but the recipe just screaming out for me to try it…

making caramel is tricky….2 cups of sugar with 1/4 cup of water…bring it to boil n until it turns reddish brown…n shock the mixture with a bowl of ice water…pour into ramekins


mix 3 eggs, 12 oz cream cheese, 1 can (14oz) condensed milk, 1 can (12oz) evaporated milk, 1/2 cup of milk, n 1 teaspoon of vanilla extract until it’s all incorporated…pour over the caramel into the ramekins…the recipe asked for smaller ramekins…but i didnt have except for these big ones n heart shapes =P  so everyone had bigger servings…


place ramekins on a baking dish resting on a towel n pour hot water bath up to half of the side…cover with foil n bake at 325 deg F for 30mins…since it can be refrigerated for up to 3 days…these were made on tuesday…n still good on thanksgiving day =)  our parents said they were yummy….

the night b4…we wanted to make lobster mash potatoes…but the lobster lump meat at the stores were to pricey…so we decided to get live lobsters n steam them instead….since they were only 7.99/lb at a nearby store…doesnt beat the 5.69/lb we had in maine…but that will do….but we got more so that the nite b4 we can make some ginger n scallions lobster…accompanied by broccili n mushroom pasta…

n we steamed a 1 1/4lb lobster for the mash potatoes….

Day of cooking…we started nice n early at 9am…

this was the best recieved dish of the night….


baste ham in 2 cans of soda…use toothpick to put on pineapple rings n marashino cherries…n sprinkle light brown sugar on the rings…cover with foil n place in oven at 325 deg F…baste with colar every 30mins until the internal temperature reaches 140 deg F….it took us about 2.5hrs…

Deep Fried Turkey…


sam’s special dry rub….n deep fried…3mins per pound…i think they over fried the turkey…

Roasted Red Potatoes with Rosemary


since we have a big rosemary bush outside….we decided to make this dish..cuz it’s one of my favorite from boston market =P  just mix together red potatoes, extra virgin olive oil, salt n pepper…roast at 400deg F for 45mins covered with foil..then 15mins uncovered for crispiness…

Lobster Mash Potatoes

we didnt have enough lobster meat for the amount of potatoes used…so u couldnt really taste the lobster…next time we will need 2 lobsters or use less potatoes…we had about 3.5 lbs of potatoes…

Brussel Sprouts with Bacon – recipe from foodtv.com

i think brussel sprouts r underrated…they’re SOOOO GOOD!!!  especially with bacon…


i love brussel sprouts….

Corn & Tomato Salad – was supposed to be with avocado…but the avocado we got is not ripe enough…


corn n cherry tomatoes….dressing was 2 tablespoons of extra virgin olive oil, 1/4 teaspoon of salt and pepper, 1 tablespoon of fresh lime juice…

for alot of people…the turkey is the centerpiece of the feast…but i made a small arrangement for the occasion…

sammy’s mom made some sushi….
