ma lai koh – malay cakes

my sis has a craving for ma lai koh n asked me to make them cuz they no longer have them at dim sum restaurants…so i scoured over the internet for a good recipe…until i found this recipe…it was hard finding the custard powder…but nothing a chinese supermarket doesnt carry…

found at chinese supermarkets…near the spices n flour section

another prob i had was…most if not all the recipes r from overseas…n like what everyone else other than the US…the recipe is in METRIC…so i had to wreck my brain converting the recipe….this site was really useful…i would add more sugar into it…time to add a digital scale into the registry =P

  • 3/4 cup + 3 teaspoons of brown sugar – i would use a full cup of sugar next time
  • 5 eggs
  • 1/3 cup + 1 tablespoon of vegetable oil
  • 1/2 cup + 1 tablespoon of milk
  • 2 1/4 cups of all purpose flour
  • 4 tablespoons of custard powder
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda

1.  whisk the sugar and the eggs until light and creamy
2.  sift the flour, custard powder, baking powder, and baking soda and set aside
3.  fold in the oil and the milk

4.  fold in the flour mixture until well combined
5.  pour into well greased baking pan

6.  steam for 30mins or until skewer comes out clean when tested…

the texture is just like how i remembered it…they’re best consumed piping hot…n the taste is there…but would prefer it sweeter…next batch =P
