Oatmeal Raisin Cookies

oatmeal raisins cookies…i personally love chocolate…hence all the chocolate cookies coming out..but sam wanna have something different…plus it’s more healthy for the kids…these were soft n chewy n gotten rave reviews…recipe from martha’s baking handbook

ingredients

  • 1 1/2 cups of all purpose flour
  • 1 cup of packed light brown sugar
  • 2 sticks of unsalted butter
  • 1 cup of sweeten coconut
  • 3 cups of oats
  • 1 cup of raisins
  • 1 teaspoon of cinnamon
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • 2 teaspoons of vanilla extract
  • 1/3 cup of maple syrup
  • 1 large egg

1. preheat oven to 325 deg F
2. whisk together flour, baking soda, salt, n cinnamon
3. fold in coconut into flour mixture and set aside

4. cream butter and sugar together
5. mix in maple syrup
6. add egg and vanilla extract

7. mix in flour mixture in 2 batches until JUST combine…don’t over mix
8. mix in oats n raisins
9. bake for 18-20 mins until golden brown
