marshmellow recipe…a little differentiation from this recipe

3 tablespoons of gelatin (3 packages of knox gelatin), 1/2 cup water, 2 cups sugar, 2/3 cup corn syrup, 1/4 cup water, 1/4 teaspoon salt, 1 tablespoon vanilla extract, powdered sugar or matcha powder or cocoa powder

  • grease and powder 9×13 baking pan (i used alumium baking pan instead of glass, the only difference is that there were inprints when u take the marshmellow out…it didnt show since we cut them into little squares

  • mix the gelatin with 1/2 cup of water into the mixing bowl.  let it sit and bloom for ten minutes
  • mix the sugar, corn syrup and 1/4 cup of water

  • bring the sugar mixture to a boil until the sugar pass 250 deg F
  • pour the sugar mixture into the gelatin mixture SLOWLY at slow speed…u don’t want hot sugar splattering everywhere….add salt
  • for the flavored marshmellows – when the mixture begin to fluff up…add 1 teaspoon of matcha powder or cocoa powder into the mixture
  • after the batter stop rising add the vanilla extract…about 8 minutes of mixing

  • let them cool and set overnight

  • invert the pan and wiggle the marshmellow out (if u grease ur pan good enough…it should come right off easily)
  • use a pizza wheel to cut the marshmellows into squares and dredge each piece into powdered sugar for reg, matcha for green tea, and cocoa powder for chocolate flavored marshmellows

it was yummy…n the texture was perfect except for the green tea ones….i LOVE the chocolate ones…mite do chocolate dipped chocolate marshmellows next time
